Chef Tony's Bolognese
Ingredients
- 2 tablespoons Extra virgin olive oil
- 1 each white onion diced
- 2 ribs celery diced
- 1 small carrot diced
- 4 tablespoons fresh chopped garlic
- 1 each bay leave
- 4 slices bacon chopped
- 1# ground beef ( short rib blend works great)
- 1/4 pound ground veal
- 1/4 pound ground pork
- 3 Cans of your favorite tomatoes
- 1/2 cup of chianti wine or whatever you have available
- rind from small piece grana padana cheese. keep rest for topping pasta at end
- 2 Oz heavy cream optional
- 1/2 cup fresh basil chopped
Method
- Place olive oil into a heavy sauce pot and place on low flame till slightly heated (don't over-heat)
- Add bacon and cook till crisp
- Put garlic onion, celery and carrot and cook about 5 minutes
- Add your ground meats and cook an additional 5 to 10 minutes until cooked thru
- Add red wine and simmer another 5 minutes
- Add your tomatoes and grana padana cheese rinds
- Use a potato masher to break up tomatoes and meats - let simmer 1 hour
- Finish with the heavy cream (optional) and basil
- Serve topped with grated grana padana/ toasted ciabatta bread and your favorite pasta (Chef Tony's preference is Paperadelle or rigatoni)
